It’s no surprise that pumpkins literally take over flavors once Fall hits. While visiting my parents on Long Island, my Mom taught me a new recipe with some of her left over pumpkins. This is something she calls “Tortitas de calabaza.”  Since she’s always showing me new recipes, I thought this one was great to share for the upcoming holiday!

What you’ll need:

2 cups of pumpkin, powdered sugar, cinnamon, vanilla extract, 2 eggs, salt, sugar, flour

What you’ll do:

1. Boil the pumpkin with a bit of salt (to taste)

2. Once boiled, drain and mash pumpkin

3. Add 2 eggs to mashed pumpkin

4. Add about 3 tablespoons of sugar (to taste)

5. 1 teaspoon of vanilla extract

6. 4 tablespoons of flour (Pesto recommended)

7. Mix well, if batter is too hard add a touch of milk (only if too hard)

8. Fry pieces on oil (oil must be VERY hot)**

9. Once fried,  place on plate and scatter powdered sugar (to taste)
